Alfabeto pasta with spring vegetables and salmon


  • 400g Alfabeto Panzani pasta
  • 600g salmon fillet
  • 300g spring vegetables (broccoli, baby carrots,snow peas, etc.)
  • 80ml vegetable stock
  • 50g of butter
  • olive oil
  • fresh thyme
  • Salt

Preparations steps

  • 1. Cook pasta according to directions on package.
  • 2. Preheat oven to 180 °C. Season the portions of fish with salt and thyme and sear on both sides in olive oil.
  • 3. Place salmon on a baking sheet and bake in oven for about 7 minutes.
  • 4. Chop spring vegetables and blanch them in such a way as to retain their crispness. After removing from boiling water, plunge immediately into ice water to retain the fresh colour of the vegetables.
  • 5. Bring stock to a boil in a pot. Add the vegetables, heat thoroughly and season with salt.
  • 6. Add the pasta to the prepared vegetables and heat again.
  • 7. Remove from heat and mix in cold butter to nicely thicken the sauce.
  • 8. Spoon the pasta onto a plate and top with a salmon fillet.
