Aubergine Lasagna


  • ½ a green pepper
  • ½ a bottle of tomato pulp
  • ½ an onion
  • ½ pack of Panzani Lasagne
  • 1 package of grilled aubergine slices
  • 2 courgettes
  • 200g mozzarella stick
  • 50g grated gruyère
  • Olive oil

Preparations steps

  • 1. Peel and mince the onion. Wash, de-seed and chop the pepper into small cubes. Sauté in olive oil. Add the tomato sauce. Salt and pepper. Allow to simmer for a few minutes.
  • 2. Wash the courgettes and slice into thin strips, length-wise. Brush with olive oil, then place under the oven's grill for a few minutes.
  • 3. Pour a little tomato sauce into a medium-sized baking dish. Spread it around, then arrange the sheets of lasagne on top. Cover in tomato sauce, arrange the slices of grilled aubergine, grilled courgette strips, and cover in mozzarella slices. Repeat until you have exhausted all of the ingredients.
  • 4. Finish up with a layer of tomato sauce and a little grated gruyère. Cook for 30 to 40 minutes in an oven preheated to 180°C.
