Linguine with basil pesto, courgettes and cherry tomatoes

  • 400g Panzani Linguine
  • 1 courgette
  • 250g cherry tomatoes
  • Basil leaves
  • 5 garlic cloves
  • 200g Parmesan
  • 50g pine nuts
  • 3 dl olive oil
  • Salt, pepper

Preparations steps

  • 1. Cook the pasta.
  • 2. In a mortar or blender, prepare the basil pesto by adding 2 garlic cloves, the pine nuts and the parmesan.
  • 3. Sauté the diced courgettes in a saucepan with olive oil.
  • 4. Add remaining garlic. Add cherry tomatoes, pour a little bit of cooking water from the pasta in and season with salt and pepper.
  • 5. Add the cooked pasta to the sauce and heat.
  • 6. Remove from heat and incorporate the pesto.
  • 7. Serve with grated parmesan.
